Ever tried to fry the milk? Wait! What!!! It’s impossible. Yes, it sounds impossible but taste delicioso as said in Spanish. Leche Frita or fried milk is a cold-milk pudding that is prepared with flour, eggs, butter, and sugar. It’s crispy outside and milky inside and goes well with a scoop of ice-cream.
Spaniards love Leche frita this way even you would love it too. Want to try this luscious treat? Here’s the full recipe but be patient while cooking as it takes hours to get ready.
Fried Milk Recipe
- Cornstarch- 3 and a half tablespoons
- All-purpose flour- 7 tablespoons
- Sugar- half cup
- Milk- 1 quarter
- Large eggs- 2
- Olive oil- 1/4 cup
- Butter- 2 tablespoons
- Cinnamon stick- 1
[Tip: Vegetable oil can be used as an alternative to olive oil and you can use bread crumbs instead of flour for coating.]
Take only 3 and a half tbsps of flour and mix with sugar and cornstarch in a bowl.
Add a cup of milk to the dry mix and whisk. Make sure the mixture is lump-free. Leave it for 10 or more minutes to set.
Heat the remaining milk on a low-medium flame. Add a cinnamon stick to the milk and boil for few minutes.
Strain the milk and pour over the flour mixture slowly. Keep stirring the mixture while adding the warm milk.
Put this mixture onto the stove and boil on low heat for 10 minutes. Remove the pan once the mixture gets thick.
Grease a glass baking dish and transfer the milk and flour mixture to it
Let it set for 3 hours in the refrigerator. Once it’s set, take out the Leche frita from the baking dish. Cut small squares of equal sizes for the next step.
Heat the frying pan, add olive oil and butter. Meanwhile, beat the eggs and coat the Leche frita cubes with flour.
Dip each cube in the beaten eggs, remove excess and transfer to the frying ban. Fry each side until it turns golden.
Take out the fried milk cubes onto a paper towel. Sprinkle cinnamon powder and enjoy with your favorite ice cream.
