Here is a recipe to cook lighter yet delicious pancakes. Grab these ingredients first:

  • Plain flour(100g)
  • Caster sugar(2 tbsp)
  • Salt (¼ tbsp)
  • Baking powder(¼ tbsp)
  • Unsalted butter( only 25g)
  • A large egg
  • Greek yogurt(50g)

For the sauce, you will need three tablespoons of raisins, two lemons juice, honey(150ml), and lemon zest. Take a small pan for making the sauce. Mix these ingredients and let them simmer till the liquid gets reduced, and you get a syrup-like thickness.

Now, take a big bowl and add flour, sugar, salt, and baking powder for the pancake mix. Add the beaten egg to this mix and whisk all the ingredients. To make the batter of the right consistency, consider adding water but not more than 50ml. The pancake batter is ready.

Spread the mixture on a non-stick pan. Let it cook for a while or until you get a golden color on the pancake. Flip the pancake once you see bubbles over it. Cook for 3-4 minutes and your special pancake is ready.

If your pancake sticks to the bottom of the pan, then add butter and turn the knob to medium heat. Serve the pancake with yogurt and sauce on beautiful plating.
